Did you know that February 19th is National Chocolate Mint day? Honestly, is there anything that doesn’t have a day anymore? I do love the idea of celebrating something totally random each day, and since chocolate and mints and the combination of the two are a huge hit in this house, we decided to celebrate!

There is no one I know with a bigger sweet tooth than Luke. His love of dessert rivals my own, so when I offer to make some cookies, he’s ready to go! These cookies are super quick and easy to make and were a favorite with the boys right away.

We ordered all of our groceries we needed through Amazon Prime Fresh. I love how convenient it is to use! Normally I can put my order in the afternoon or night before and have it delivered on my doorstep before 7:00 am! If it’s available in your area, I would for sure give it a try. As a busy mom, Amazon Prime Fresh has been life changing for me, saving me hours of time each week that I would be in the grocery store!

Start by preheating your oven to 350 degrees. We didn’t have any defrosted butter, so we put it in a bowl and softened it up a little bit in the microwave.

Mix your sugar, butter, eggs & vanilla in one bowl together. Then in a separate bowl, mix in your flour, cocoa, salt, & baking soda.

Luke loves to crack the eggs when we are cooking and is finally getting to the point where I’m not fishing shells out! I wish I could tell you I knew why his hand is green! Haha!

True to Luke’s style, his shirt only lasted so long! We don’t have a stand mixer, so we busted out our old faithful $9.99 hand mixer and mixed up the bowl with the wet ingredients.

Once your wet ingredients are nicely mixed, slowly add in the dry ingredients, using the mixer as you go. Gently fold in your crushed up Andes Mints to the mixture. Spoon the cookies onto a cookie sheet and bake them for 8-10 minutes.

Mint Chocolate Cookies

A lot of people like to let their cookies cool but we have found that this recipe (and most other cookies) are best enjoyed hot! And since you’re celebrating National Mint Chocolate Day, be sure to enjoy them with a nice warm mug of Hot Chocolate with a dash of mint or a Peppermint Mocha Latte! Yum!

Chocolate Mint Cookies

Celebrate National Chocolate Mint Day with these gooey cookies!

  • 10 oz Crushed Andes Mints
  • 1.5 cup Sugar
  • 1 cup Softened Butter
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 2 cup Flour
  • 2/3 cup Cocoa Powder
  • 1/4 tsp Salt
  • 3/4 tsp Baking Soda


  1. 1. Pre-heat oven to 350 degrees and grease cookie sheet with cooking spray.

  2. 2. Place 10 oz of Andes Mints in a ziplock bag and crush to small pieces.

  3. 3. In one mixing bowl, combine butter, sugar, eggs, & vanilla. Beat with a hand mixer until smooth.

  4. 4. In a separate bowl mix flour, cocoa powder, salt, & baking soda with a whisk. 

  5. 5. Slowly add dry ingredients into wet ingredients, beating with the mixer as you go.

  6. 6. Fold in Mints.

  7. 7. Spoon cookies onto greased cookie sheet and bake for 8-10 min.  Recipe makes about 24 cookies.
