Have I mentioned how much we love Disney? I thought so, lol! One of our favorite movies is Ratatouille. It’s one that just doesn’t get enough cred, in my opinion. If you haven’t seen it, it’s about a boy named Louie who’s father was a famous chef, and when Louie finds himself working at the restaurant (he doesn’t yet know his is), he also finds that he cannot cook. That is until he makes friends with the adorable rat, Remy. Remy can cook, and together the two find a way to cook together and bring the restaurant back to its former glory! The dish that wins over the toughest food critic is Ratatouille.
Ratatouille is an all veggie dish, so imagine my surprise when the boys asked to try it! We had just been to the Epcot International Food & Wine Festival and one of the highlights of the event for the boys was Remy’s Hide & Squeek Scavenger Hunt. They loved looking all over the World Showcase for the cute little guy and earning their pins at the end.
Ratatouille quickly became one of the first recipes I could make well. The boys will eat it because it’s from one of their favorite movies, and it is both healthy and delicious! Here is how I make it!
I can’t multi-task in the kitchen well, so I have to do all my prep-work upfront. I use my Pampered Chef Simple Slicer to cut up my eggplant, squash, zucchini, and tomatoes. This has several thickness settings to choose from. I like number 2! It also saves me tons of time because I’m able to cut them all up really fast.
Then I use my Pampered Chef Manual Food Processor to cut up my onion and red onion. I love this thing! It is a tear-free way to cut up my onions! Plus, again, it saves me tons of time chopping. After your onions are chopped, wipe down your cutting board and chop up some fresh basil, parsley, and thyme.
Once everything is cut up, I start on my sauce. The recipe calls for 2 tbs of olive oil, but last night I tried it with coconut oil since I’m Keto now and it worked great too. Get your oil nice and hot then add in your chopped onions & red pepper. I used my Pampered Chef Everyday Pan, and it was just the right size! Cook it until the onion is translucent and most of the water is cooked out.
About halfway through cooking down the onion & pepper, add in 4 cloves of garlic. I use my Pampered Chef Garlic Press. Continue to cook the sauce down for a total of about 10 minutes, adding in some of your parsley, thyme, & basil and stirring every couple of minutes.
Once your sauce is cooked remove it from the heat and smooth it out over the bottom to evenly cover the entire pan. Then take your veggies and alternate them all the way around the pan. Take your remaining herbs, mix with some olive oil and drizzle over the top. Cover and cook for about 30 minutes.
After 30 minutes, take your veggies out and sprinkle mozzarella cheese & parmesan cheese over the top and put back in the oven for another 10 minutes. Once your cheese is nice and toasty & melted, take your dish out!
Serve immediately! I usually make some chicken to serve with it, and give the boys some pasta as well! When done, you should a dish the whole family loves, and have some leftovers for tomorrow.

Preheat your oven to 375 deg.
Slice Egg Plant, Yellow Squash, Zucchini, & Tomatoes. Dice up Yellow Onion & Red Bell Pepper. Chop up basil, parsley & thyme and set aside.
Mix sauce in an oven safe pan. Pour 2 tbs of oil onto the pan. Once oil is hot, saute onion & pepper until onion is translucent. About halfway through add minced garlic and some of the herbs.
Once sauce is cooked down, remove from heat. Add veggies to the pan, alternating in a circular pattern.
Mix remaining herbs into 2 tbs of oil and drizzle over the top of the veggies. Cook covered for 30 minutes.
Remove cover and sprinkle cheese over the top and put back in the oven, uncovered, for another 10 minutes. Remove from the oven & enjoy!
