Ingredients

  • 1 whole Egg Plant
  • 1-2 whole Yellow Squash
  • 1-2 whole Zucchini
  • 4 whole Roma Tomatoes
  • 1 whole Yellow Onion
  • 1 whole Red Bell Pepper
  • 4 tbs Olive Oil or Coconut Oil
  • 1/2 cup Mozzarella Cheese
  • 1/2 cup Parmesan Cheese
  • 4 cloves Garlic
  • 2 tbs Fresh Basil
  • 2 tbs Fresh Parsley
  • 2 tbs Fresh Thyme

Instructions

  1. Preheat your oven to 375 deg.

  2. Slice Egg Plant, Yellow Squash, Zucchini, & Tomatoes. Dice up Yellow Onion & Red Bell Pepper. Chop up basil, parsley & thyme and set aside.

  3. Mix sauce in an oven safe pan. Pour 2 tbs of oil onto the pan. Once oil is hot, saute onion & pepper until onion is translucent. About halfway through add minced garlic and some of the herbs.

  4. Once sauce is cooked down, remove from heat. Add veggies to the pan, alternating in a circular pattern.

  5. Mix remaining herbs into 2 tbs of oil and drizzle over the top of the veggies. Cook covered for 30 minutes.

  6. Remove cover and sprinkle cheese over the top and put back in the oven, uncovered, for another 10 minutes. Remove from the oven & enjoy!
